VANILLE KIPFERL
400 g flour [universal flour]
100 g fine sugar
300 g butter
140 g nuts [ground hazelnut]
pinch salt
powdered sugar
vanilla sugar
[all ingredients need to be cold and processed quickly]
_ put flour, sugar, nuts and salt on a board
_ place butter in the center and cut cold butter into small pieces [5x5mm]
_ knead ingredients [with a lot of pressure, but as short as possible] until it forms a smooth dough
_ put half of the dough into the fridge [otherwise it gets to warm before you can process it]
_ preheat oven to 170°C
_ make 1,5 cm thick rolls - cut of small pieces and form into a ball
_ put the ball into your left and and use the side of your right hand to form little rolls [about 8-10mm thick]
_ place them onto a baking paper forming a little U
[if they brake - form a ball again and start new - don’t try to fix it]
_ bake cookies for 10-15 min [until lightly golden]
_ mix powdered sugar with vanilla sugar
_ sprinkle cookies with sugar while still warm
_ let cool before taking them off the paper
