SUNNY SPINACH PIE
500 g flour
90 ml olive oil
200 ml white wine
[room temperature]
1.5 tablespoons salt
350 g spinach
230 g ricotta cheese
1 egg
100 g parmesan cheese
salt
pepper
bread crumbs
_ mix all ingredients together
_ knead until you get a smooth dough
_ cover with a plastic wrap while preparing the rest
_ boil spinach
[squeeze out the water if it turns out really liquid]
_ let cool slightly
_ add ricotta cheese, egg and grated parmesan cheese
_ season with salt and pepper
_ mix well
_ add bread crumbs to soak up remaining liquid
_ preheat oven to 180°C
_ divide dough into two equal pieces
_ roll both into circles
[with a diameter of about 30 cm - should fit your baking tray]
_ place one circle onto a baking paper
_ place part of the stuffing in the center
_ with the rest form a circle around it
_ cover with the second dough circle
_ wet boarders with water and attach them to one another using a fork
[cut away any out of shape dough]
_ place a small bowl / teacup over the central stuffing
_ punch around it with a fork to connect the two circles
_ using a sharp knife to cut the outer circle into small wedges
_ turn all wedges upside 90°
_ bake for 45 to 60 minutes
_ serve with a fresh yoghurt dip and let people snack off one wedge after the other
