STONE PINE HONEY
stone pine cones [fresh, juicy, violet]
sugar
_ cut the pine cones into thin slices [3-5 mm]
_ layer pine cones and sugar into a sterile glass in layers
[sugar and cones should be similar in volume]
_ finish with a layer of sugar
_ close well and store in a warm place [at room temperature] for several weeks [6-10 weeks]
[sugar melts over time and forms a honey-like syrup with the liquid from the pine cones]
_ when the sugar melts and the cones are exposed on top add more sugar
_ when all the sugar is melted and the cones look shrivelled, pour the honey through a fine sieve
[if you have added a lot of sugar, the sugar may not melt completely. Then heat the honey once more in a pot and melt the sugar before pouring it through a sieve]
_ fill into sterile glasses
[The pine cones soaked with sugar can be warmed up with some water and then poured through a sieve again. Makes a delicious drink]
