CHAI CONCENTRATE
4 ½ cups water
10 pods cardamon
½ teaspoon ground pepper
½ teaspoon ground nutmeg
3 sticks cinnamon
5 pods star anise
10 seeds pimento
1 vanilla bean
1 stalk lemongrass
4 inch ginger
2 tablespoons honey [or sugar]
10 bags black tea
[or equivalent in loose leaves]
_ bring water to boil
_ add spices and tea bags
_ boil at low temperature for 1 hour
_ remove pan from heat
_ strain through a fine-meshed sieve
_ add honey [or sugar]
_ allow to cool before filling into bottles
To drink mix 1 part concentrate with 2 parts milk
[I like to freeze the concentrate in ice cube trays. To drink fill a glass with frozen chai tea cubes and fill up with milk]

2 Esslöffel Honig [oder Zucker]
10 Beutel schwarzer Tee
[oder Äquivalent in losen Blättern]
