TOMATO BRUSCHETTA
8 slices ciabatta
[or crusty Italian bread]
500 g heirloom tomatoes
⅓ cup olive oil
[good quality]
1 clove garlic
¼ cup basil leaves
2 tablespoons fresh oregano leaves
sea salt
½ lemon [juice]
_ heat half of the olive oil in a large pan and grill bread on both sides
_ mince garlic and sprinkle over the breads
_ dice tomatoes
_ mince basil leaves
_ toss tomatoes with olive oil, basil and oregano and season to taste with lemon juice and salt
_ spoon tomatoes over the grilled bread
