TANGERINE LIQUEUR
1.2 kg tangerines [untreated, organic]
160 g sugar
50 g light honey
4 star anise
5 pods cardamom
1 stick cinnamon [optional]
1 vanilla bean [optional]
500 ml unflavored alcohol [vodka, grain].
Version 1
_ wash tangerines with hot water and peel thinly [keep peel]
_ juice fruits
_ put juice and peel together with sugar, honey and the spices in a pot
_ boil down for 10 min to a syrup
_ let cool to room temperature
_ add alcohol and let steep for about two hours
_ pour liquid through a filter [a fine sieve will do, but if you want it clear you can pour it through a cheesecloth or coffee filter]
_ add more honey to taste if necessary
_ fill into sterile bottles
Version 2
[shown in the pictures - because I had many small tangerines]
_ wash tangerines with hot water and cut them into quarters
_ put them into a big sealable container
_ add sugar, honey and spices and add the alcohol
_ store in a dark, cool place for 6 weeks [shake it often]
_ pour the liquid through a filter [a fine sieve is enough, but if you want it clear you can pour it through a cheesecloth or coffee filter]
_ if necessary add more honey to taste
_ fill into sterile bottles
