POMEGRANATE CUCUMBER SALSA
½ small red onion
2 large pomegranates
2 small cucumbers
1-2 jalapeños
1 lime
small bunch cilantro
½ teaspoon sugar
¼ teaspoon cumin
¼ teaspoon salt
_ finely dice onion
[optional: soak onions in cold water for a few minutes for a more mellow flavor]
_ slice pomegranates open and collect the seeds
_ peel cucumbers and cut into small cubes
_ deseed and finely dice jalapeños
_ grate zest off the lime and capture the juice
_ roughly chop cilantro leaves
_ combine all ingredients and toss well
_ taste and adjust seasoning if necessary
_ leave to marinate in the fridge for about 1 hour for the flavors to develop
