SEMOLINA QUARK CAKE
1 tablespoon raisins
1 tablespoon rum
2 eggs
4 tablespoons sugar
1 package vanilla sugar
1/2 lemon [zest]
250g quark
50g wheat semolina
pinch salt
fresh berries
_ soak raisins in rum
_ combine egg yolks, 2 tablespoons sugar, vanilla sugar, salt and lemon zest and beat until creamy
_ whisk in quark and semolina
_ beat egg whites with 2 tablespoons sugar until stiff
_ combine quark mixture with stiff egg whites and the rum raisins
_ preheat oven to 180°C and grease a baking pan
_ spoon batter into baking pan and top with berries
[push them a little into the batter]
_ bake for about 20 minutes [until golden]
