GINGER PUDDING WITH MANGO
1 stick lemon grass
large piece ginger [10g]
2 lime leaves
500 ml milk
4 egg yolks
50 g sugar
1 tablespoon starch
4 leaves gelatin
1 small mango
2 teaspoons black sesame
_ crush lemongrass with the back of a knife
_ peel ginger and cut into small slices
_ heat milk with lemon grass, ginger and the lime leaves
_ bring to a boil
_ take off the heat and set aside to absorb the flavours for 30 minutes
_ soak gelatin leaves in cold water
_ whisk egg yolks with sugar until fluffy
_ mix in the starch
_ strain milk through a sieve and add to the egg mixture
_ combine well and return to a pot
_ bring to a boil [while stirring constantly]
_ as soon as it boils, remove from the heat and stir in the gelatin
_ strain through a sieve into small cups
_ place in the fridge to firm up [about 4 hours]
_ peel mango and get rid of the stone
_ puree mango to get a smooth cream
[if you can’t get your hand on a nicely ripe one, canned mango is fine too - is quite a bit sweeter usually]
_ loosen the ginger pudding around the edges and turn upside-down
_ spoon mango puree on top and sprinkle with sesame

1 Stange Zitronengras
großes Stück Ingwer [10g]
2 Limettenblätter
500 ml Milch
4 Eigelb
50 g Zucker
1 Esslöffel Stärke
4 Blätter Gelatine
1 kleine Mango
2 Teelöffel schwarzer Sesam
