FIVE SPICE POWDER
3 tablespoons cinnamon powder
6 star anise
1 ½ teaspoons fennel seeds
1 ½ teaspoons szechuan peppercorns
¾ teaspoons ground cloves
[makes about ¼ cup]
_ roast whole spices in a hot pan until they get very fragrant [without oil]
_ combine all ingredients in a blender or coffee grinder
_ blend until finely ground
_ store in an airtight container [keeps up to 2 months]
