WHITE MOLE HILL CAKE WITH STRAWBERRIES
3 eggs
150 g butter
[room temperature]
100 g sugar
pinch salt
40 ml cream [or eggnog]
½ package baking powder
150 g flour
½ lemon [zest]
250 g strawberries
50 g white chocolate [rasps]
½ lemon [zest]
20 g sugar
150 g quark [20% fat]
200 g cream
_ butter and grease a round baking pan [about 18 cm]
_ preheat oven to 170°C
_ combine butter and sugar and whisk until foamy
_ mix in one egg after the other
_ add cream and salt
_ finally mix in flour, baking powder and lemon zest
_ transfer batter to baking pan and bake for about 35 minutes [until golden]
_ once cake is done and slightly cooled cut off the ‘dome’ so you have a cake with an even height
_ crumble up the ‘dome’ into fine crumbs
_ prepare a round bowl by lining it with cling foil
_ whip cream until stiff
_ combine with quark, lemon zest, sugar and chocolate rasps
[I just grate chocolate - but you can also buy chocolate flakes / chips]
_ wash strawberries and cut off the green
_ pour whip cream mix into the bowl
_ push strawberries into the mix [pointy side down]
_ top off with the cake bottom
_ chill in the fridge for at least 1 hour [longer is better / safer]
_ turn bowl upside down onto a plate
_ carefully remove bowl and cling foil
_ top with a layer of cake crumble [carefully press onto the surface]
[keeps in the fridge for 2-3 days]
