RED CABBAGE - POMEGRANATE SALAD
½ red cabbage
1 big apple
1 pomegranate
salt
black pepper
1 tablespoon sunflower oil
½ lemon [juice]
_ finely cut or grate cabbage
_ add salt and lemon juice [‘massage’ into the cabbage]
_ leave for 10 minutes to soften
_ peel and grate apple
_ mix in with the cabbage
_ squeeze juice out of half the pomegranate seeds
_ add remaining seeds and juice to the cabbage
_ season with oil, pepper and some more lemon juice
_ toss well and serve
