GERMAN POTATO STEW
700g potatoes
2 carrots
1 onion
500 ml vegetable stock
salt
pepper
2 tablespoons oil
parsley
Seitan sausages
_ peel and dice potatoes
_ dice onion and carrots
_ heat oil in a medium pan
_ sauté onion and carrots
_ add potatoes and stock
_ cover and simmer until potatoes are soft
_ puree soup [keep some potato and carrot pieces]
_ finely chop a big hand full of parsley
_ stir in parsley [add water if the stew got too thick]
_ season with salt and pepper
_ slice sausages into bite sized pieces and add to the soup
_ serve stew topped with chopped sausages
