PASSION FRUIT LEMONADE
ginger syrup:
¼ cup sugar
1 cup water
thumb sized piece ginger
lemonade:
4 cups water
4 passion fruits
2 limes [juice]
½ cup ginger syrup
ice
_ peel ginger and cut into thin slices
_ combine sugar and water in a small saucepan
_ bring to a boil [keep stirring until sugar dissolves]
_ reduce to a simmer and add ginger
_ simmer until syrup starts to thicken [about 6-8 minutes]
_ take off the heat and set aside to cool
[remove ginger slices before combining with the rest of the liquids]
_ cut passion fruits in half and scoop out the juice and seeds
_ combine water, passion fruit, lime juice and ginger syrup
_ chill and serve over ice
