MARBLE CAKE
2 eggs
50 g sugar
110 g butter
2 tablespoons vanilla sugar
60 g powdered sugar
110 g flour
1/2 package baking powder
65 ml milk
2 cl good rum
3 tablespoons cocoa powder
_ grease and flour baking pan
_ separate the eggs
_ whisk egg white until fluffy
_ add sugar [whisk until stiff]
_ mix yolks, butter, vanilla sugar and rum until fluffy
_ add powdered sugar [whisk until almost white]
_ mix flour and baking powder well
_ add flour and milk to the egg yolk mixture
_ finally use a wooden spoon to softly mix in the stiff egg white
_ preheat oven to 180°C
_ spoon 2/3 of the mixture into baking pan
_ add cocoa powder to the remaining batter
_ spoon on top of the light batter
_ swirl the batter to create a marble effect
[use the end of the wooden spoon - don’t swirl too much]
_ bake for 30 min
_ let cool and serve with fresh fruit
