LEMON GINGER POPSICLE
1 cup lemon juice
1/2 cup apple juice
¼ cup lime juice
2 teaspoons grated ginger
2 teaspoons honey
_ simmer juices and ginger in a small sauce pan for 10 minutes
_ let cool slightly
_ stir in 2 teaspoons honey [make sure it’s fully dissolved]
_ taste and add more honey if desired
_ let cool completely
_ fill juice mixture into ice molds and add wooden sticks
_ freeze for a minimum of 6 hours
