HONEY COOKIES
2 cups flour
⅔ cup sugar
1 teaspoon salt
¾ cup butter [cold]
3 tablespoons honey
[more for brushing]
_ combine flour, sugar and salt on a work surface
_ cut butter into chunks and knead into the dough
_ add honey and knead until a silky dough forms
_ wrap in plastic foil and chill for 30 minutes
_ preheat oven to 180°C
_ dust the work surface and roll out dough [4-5 mm]
_ cut out cookies and transfer onto a baking sheet lined baking tray
_ bake for about 15 minutes
[until they start to turn golden at the edges]
_ remove from the oven and brush lightly with honey]
_ decorate with icing or sprinkle with sea salt
