HABANERO MANGO SAUCE
1 cup mango
3 habaneros
1 cm piece ginger
2 cloves garlic
¼ cups water
½ cup vinegar
½ teaspoon salt
good pinch black pepper
1 lime [juice]
_ remove stems from habaneros
[remove seeds or use less to balance spiciness to your liking]
_ peel ginger and garlic
_ peel and cut mango into medium chunks
_ add mango, habaneros, ginger, garlic and water to a blender
_ blend into a smooth paste
_ transfer to a sauce pan and heat to a low to medium heat
_ add vinegar, salt and pepper
_ mix well and heat up gradually for the sauce to thicken
_ cook at a soft bubble until you are happy with the consistency
_ take from heat and leave to cool a little
_ stir in lime juice
_ bottle into sterile bottles or jars
[store in a cool and dry place]
