CHINESE CUCUMBER SALAD
1 english cucumber
[or 3 small farmer cucumber]
3 cloves garlic
1 tablespoon Chinese black vinegar
1 tablespoon soy sauce [light]
1 teaspoon sugar
½ teaspoon salt
½ teaspoon sesame oil
_ remove tough skin from cucumber [if it has any]
_ cut in half lengthwise
_ crush with the flat of a broad knife [or wrap in a kitchen towel and crush with a rolling pin]
_ cut into bite size pieces [if crushed with a rolling pin you can just rip the cucumber into bite sized pieces]
_ crush and mince garlic
_ combine vinegar [the right vinegar is crucial here], soy sauce, sugar, salt, sesame oil and garlic
_ right before serving pour the sauce over the cucumber and mix well
[if you add the sauce to early the cucumber will lose water and dilute the sauce]

1 Esslöffel chinesischer schwarzer Essig
1 Esslöffel Sojasauce [hell]
1 Teelöffel Zucker
½ Teelöffel Salz
½ Teelöffel Sesamöl
